Jaggery

Why Jaggery Beats White Sugar

These puffed rice snacks are sweetened with jaggery, not refined white sugar. Jaggery is sap boiled down until it sets, so a little natural iron stays in it.

How jaggery is made

Cane juice, or palmyra sap for palm jaggery (karupatti), is boiled slowly until it thickens, then cooled until it sets. It is not bleached or spun into white crystals.

Iron that sugar throws away

Refined white sugar is almost pure sweetness and has virtually no iron. Jaggery keeps minerals from the sap, and iron is the one it is known for.

A rounder sweetness

Jaggery tastes like caramel, not a sharp sugar hit. It binds the puffed rice and carries the flavour of the snack.

Why it is the better sweetener

White sugar is stripped down to sucrose. Jaggery is the less processed sweetener, which is why this snack uses it instead.

Jaggery is still a sweetener, so we use it for taste. The difference is what it keeps: iron and minerals that white sugar does not.
